Ground Beef and Cabbage Stir Fry

I adapted this recipe from Wholesome Yum's "Crack Slaw". What I love about this is that you can use any manner of meat or veggies - it comes together super quick on a weeknight when you only have 20 minutes to prep dinner (especially quick if you use pre-cut veggies or bagged coleslaw mixes)
More Details

1 lb lean burger, moose, venison, or caribou, seasoned with salt and pepper to taste

several cups of veggies (shredded cabbage, slivered onion, slivered carrot, slivered bell pepper, broccoli, snow peas, etc)

3 cloves minced garlic* 

2 Tb minced ginger*

3-4 Tb coconut aminos

3 Tbs sesame oil

opt: chili-garlic sauce

opt: sliced green onions

Sauté burger and season with salt and pepper to taste. Drain if needed, then add in the ginger and garlic to the side of the pan and sauté until fragrant, 30-60 seconds. Add in the veggies, coconut aminos, sesame oil, and chili garlic sauce,  and stir to incorporate. Sauté until veggies still have a slight bite. Stir in the sesame oil and top with fresh green onion. YUM!  Serve over rice* or cauliflower rice. 

 

*I love buying my ginger and garlic in bulk at Costco and then mincing in the food processor and storing in small containers in the freezer (I mince the garlic with some olive oil and it stays very nice that way). That way I always have a container of garlic and ginger in the fridge, ready to go!

*If you have time to cook the rice in the morning, or the day before, and reheat it for dinner, the rice will develop "resistant starches", which is better for blood glucose.
