I have really been enjoying this chocolate mousse made with cottage cheese - very easy to whip up and a sweet treat for after meals that I can feel good about eating because it gives an amazing boost of protein to any meal, without added refined sugar! (Sorry to my Dairy-Free friends, I haven't come up with a dairy-free version, yet!)

Aubrey’s Chocolate Protein Fluff 

 

16 oz tub 4% cottage cheese  

4-6 T cocoa powder

½-3/4 c allulose or other alternative sugar

½-1 T chia seeds (optional)


 

Put everything in the food processor, except chocolate chips if using,  and scrape down several times, blending until smooth. Pulse in chocolate chips. Put in the fridge for at least 30 minutes to set.

 

         Makes about 3 c;  4 x ¾ c servings. Per serving: 120 cal, 16g protein, 6g carb, 5g fat

 

“Chunky Monkey” variation: in addition to banana, several tablespoons of PB fit, a little extra milk, handful of toasted walnuts (pulse in at end). 

 

Cottage cheese: I like Daisy - no extra ingredients!

Sugar: You could use coconut sugar instead of allulose if you want higher carb, or even maple syrup (though I haven’t tried this, so don’t know how it would change the consistency!)

Banana: You can use a greener banana for a little extra prebiotic fiber!

Chia seeds: these add an “airy” texture
